Crystallisation of honey will occur naturally. If this occurs in your honey, simply stand the jars in a bowl of warm water for a period of time. Do not store your honey in the fridge as this will accelerate the crystallisation of the honey.
As honey comes from nature, please be advised that honey /honeycomb taste, colour, consistency and smell will vary per batch depending on what the bees are eating, the location that the honey are sourced and seasonality.

The manuka marketing people from New Zealand have done a great job of persuading the public that the only true source of manuka is New Zealand.
Clever marketing, but it’s not true.
Manuka honey is produced in New Zealand and Australia.
Indeed due to the warmer climate in Australia, our bees tend to produce honey that is far superior in MGO levels.
Scientists believe this is governed by latitudenal differences – the heat and humidity of the Australian environment.
